Ingredients:
2 large raw carrots, peeled and chopped
1/3 cup extra-virgin olive oil
1/4 cup rice wine vinegar
1 tablespoon Mirin
2 tablespoons peeled and roughly chopped fresh ginger
2 tablespoon honey
1 teaspoon toasted sesame oil
Salt to taste
Juice of one lime
Method:
Blend all ingredients, except oils, thoroughly. Combine oils and drizzle slowly while blending on med-high speed. Once all oil is added, blend on high speed for a few seconds.* If desired consistency is thinner slowly add water, if wanting a thicker consistency slowly add more carrot.
