Ingredients:
1 tea spoon black peppercorns
2 cloves thinly sliced garlic
1 cup apple cider or rice vinegar
1 cup water
1 tablespoon kosher salt
1 tablespoon granulated sugar
Method:
Place the vinegar, water, salt, and sugar in a small saucepan over high heat. Bring to a boil, stirring to dissolve the salt and sugar. Once dissolved add remaining ingredients, cool to room temperature. Then cover vegetables and refrigerate. Depending on thickness of vegetable using, thinly sliced vegetables you can serve once chilled.
